Dr Beak is a boutique distillery located in Martinborough, New Zealand, dedicated to producing premium gins that reflect the country's rich biodiversity. Founded by Lacey Bourne, a Health Science graduate with a passion for horticulture, the distillery emphasizes sustainability by sourcing nearly all botanicals locally, ensuring traceability and supporting local growers. Their gins are single-shot distilled in small batches using a bespoke copper pot still, resulting in spirits that are both bold and balanced. A portion of profits is donated to Forest & Bird, underscoring their commitment to environmental stewardship.

Not a Tonic lady, however our waiter slightly messed up my preference. Quite surprisingly - I liked this gin also. Very nice with fresh botanical notes.

This limited release gin liqueur takes inspiration from Japan. Based on traditional Japanese umeshu, this liqueur has been crafted using our Garden Gin as a base and steeping New Zealand-grown green ume fruit for several months, along with rock sugar to balance the tartness of the fruit.

This is one of my go-to’s. Lovely just with tonic and ice, but I also like it with sliced lemon, some cucumber and some mint with soda. Perfect for a Kiwi summer.
