Fen & Field Distillery stands out for its craft-driven, grain-to-glass approach. Every batch begins with milling New Zealand‑grown wheat and oats using a German stone mill, followed by on‑site mashing, fermenting, and distilling. The water used comes from a limestone bore, adding purity and mineral balance to the spirit. Three separate distillation runs - stripping, spirit, and a gin run —ensure a refined and flavourful gin. The gin run is where botanicals such as juniper, coriander, citrus peel, angelica, and liquorice are introduced.
