Harrier Springs Distillery

Harrier Springs Distillery is a family-owned craft distillery based in Pukekohe East, Waikato. Inspired by traditional distillation techniques and a passion for authentic spirit making, the distillery produces small-batch spirits using a custom-built wood-fired still that was designed and constructed by the founders themselves.

Operating under the philosophy of being "Fueled By Fire, Steeped In Tradition", Harrier Springs focuses on handcrafted production methods that prioritise flavour, character, and craftsmanship over mass production. Their spirits are carefully distilled in small batches, allowing close attention to every stage of the process.

What sets Harrier Springs apart is its commitment to traditional distilling methods. The distillery is believed to be home to what may be the world's only traditionally designed outdoor wood-fired commercial distillery still currently in operation. Built to reflect the style and function of historic distilling equipment used generations ago, the still is fuelled entirely by wood fire, creating a truly authentic production process rarely seen in modern commercial distilling.

The distillery specialises in traditional wood-fired whisky and liqueurs, with plans to expand into vodka and gin production. Every bottle reflects the team's dedication to preserving old-world distilling practices while creating premium New Zealand spirits for modern drinkers.
